L-carnosine is a dipeptide, or a compound made up of two amino acids, consisting of beta-alanine and histidine. It occurs naturally in the body - mainly in muscles, brain and kidneys, and its levels depend on gender (higher levels in men), age (decreases with age) and diet (low levels in vegans and vegetarians). The importance of carnosine in metabolic processes in the body can be demonstrated by the fact that in muscle alone, it can account for up to 0.5% of its mass.
L-carnosine is synthesised in the body from beta-alanine and histidine, and undergoes continuous metabolism. Since endogenous synthesis of carnosine decreases with age and is highly dependent on the availability of histidine, an amino acid found mainly in animal foods, deficiencies of this component may occur especially in the elderly, as well as people on vegetarian or vegan diets.
