Ti Kuan Yin (also spelled Tieguanyin) is a legendary oolong tea from the Fujian province in China. It is one of China's most beloved oolongs and is extremely time-consuming to produce (well over a dozen distinct steps in the processing are observed). Brief Health InformationTie Guan Yin tea is the premium form of Chinese Oolong teas. Being lightly fermented, these teas are high amino acids, vitamins, polyphenols and antioxidants. These combine into a tea that reduces cholesterol and helps reduce hardening of the arteries, and so can help reduce risks of heart attacks. The antioxidants it contains can also help guard against some forms of cancer, and also help fight the affects of aging and bacterial infections.Taste: This tea has a very sweet, appetizing honey-life fragrance, taste and finishing. The sweet aftertaste will linger on in your mouth after a few sips. Good for multiple infusions. How to Make TeaWhen brewing Tie Guan Yin tea, use water around 212ºF (100ºC) and infuse the tea for 1-3 minutes. This particular Ti Kuan Yin can typically be brewed for 7 infusions.
